Spanish Casserole

Spanish-Cassoulet-4After a couple of weeks off, finally life is starting to go to normal and I can get back into my cooking and then of course time to update my website. This Spanish Casserole I learned years ago from my mum, but every time I make is surprisingly delicious, I forget that something so simple and easy to make is just fantastic. Pasta with Sausages, Salad and Cakes

Pasta-with-Sausages-4Normally I don’t make the whole menu from the Jamie in 30 minutes meals, I think is too much, not only because it takes much longer than that but because you don’t need the dessert, you make a kind of healthy meal a bit unhealthy. But this time was on Sunday I had plenty time and on Sunday you can have a bit of extra cake, so I decided to make the whole menu. Ossobuco alla Milanese

Ossobuco-alla-Milanese-9Of course being risotto one of our favorites at home and one of my specialties, the first recipe from Jamie’s “Comfort Food” that I would try had to be this one. I think one of the best meals I had in long time. It was a long elaborate meal, even that in the book says 2 hours and 30 minutes, in my case was 1 hour extra, but I really didn’t mind, neither my family, this risotto has turned out to be the favorite at home and I am going to make soon again, I challenge you to make it as well, it is worth!  (more…)

Filled Speculaas

Gevulde-Speculaas-7In Dutch this cake is called “Gevulde speculaas” if would translate is then “Filled Gingerbread”, but I think I should just leave the Dutch name speculaas. Well this cake or cookie, is one of the best Dutch sweets. In this version I am based in the book “Het Nederlands Bakboek”, normally I am not that fun of it, but I have to say this one is perfect, if you want to make one, you need to get this book. Chocolate Cake

Chocolate-Cake-6I have been asked to prepare a chocolate cake for a wedding in January. Of course before then I need to test to see what is working the best. So I had to look into all my books and magazines, in the end I also did a web research and there it was, on the page of the BBC food, “Easy chocolate cake”. Well I can tell you it was easy but not that easy, still it was really delicious. I brought the cake to my work and I got the approval from my colleagues, that’s a good sign.  (more…)

Bounty Brownies

Well when you try this version from Yvette van Boven from her book “Home Baked” I think you will discover a new addiction, they are absolutely fantastic, delicious and easy. I got her book for my birthday and this was the first recipe I made, I can hardly wait to try something else of this book.  (more…)

Tortilla de Patatas (Spanish Tortilla)

Tortilla-8I think tortilla is one of the favourites and easiest recipes from the Spanish kitchen that you can make. You can eat warm but also cold, that makes a perfect meal for a picnic or to eat in a sandwich. We always say that if you potatoes and eggs you can always have people for dinner. Of course there is a bit of trick if you want to make the perfect tortilla, it is a matter of practise and to have the right cover to turn it around, that also needs skills. Speedy Scalopine

Speedy-Scaloppine-5On Friday’s normally is only the 2 of us at home for dinner, so I try to find simple recipes but still delicious and of course full of vitamins. This Speedy Scalopine from Nigella from her book Kitchen is one of those. Very simple to prepare and depending on the vegetables/salad you use, can have a lot of vitamins, the great taste comes from spices you use in the scallop, just perfect.  (more…)

Pasta Bolognese

Pasta-Bolognesa-4Pasta Bolognese must be one of the most populars sauces there is, everybody has his/her own way of making and of course I also have mine. The basic is like any bolognese, minced meat and tomatoes, what it makes different from the rest are the spices/herbs that I use plus of course I also add some vegetables, to make it a bit more healthy. Normally I made a big pan, so sauce for 6 people, that way I can freeze the half to eat another time when we don’t have much time to cook.  (more…)
