Paella is the most famous Spanish meal there is, specially the one with fish and sea food. My recipe is a bit of an alternative for those who don’t like fish or who just prefer to try something different. Risotto with mushrooms
Some time ago I already made a review for risotto with mushrooms, then was from a Jamie Oliver recipe, this time is an oven risotto from Karin Luiten. The good thing from this one is that is easier because you finish in the oven with all the bouillon, so no need to add spoon by spoon, the taste is still fantastic. Grilled Vegetables
Sometimes I hear people saying that eat vegetarian is boring, well that’s absolutely not true. I am not vegetarian, I like to eat meat or fish sometimes, but at home we eat for sure a few times a week no meat or fish at all and it is a very colorful and healthy meal then. If you grilled your vegetables they taste fantastic and they are a bomb of vitamins. You can grill I think all vegetables, it is easy and delicious and you can made endless combinations. (more…)
Chicken with Chorizo and Potatoes
I love dishes that are going into the oven, they are normally slow cooking and with fantastic taste. In the winter is of course one of my favourite things to eat. Checking into my books I found this recipe from Nigella that I had to try, being Spanish any meal that has chorizo in is something to test and it was certainly not disappointing, easy to make and with great flavours. Kofta
Kofta is one of the those recipes that everybody make just some how different. I have tried many recipes from books or magazines, so making my own combination finally I got the one is perfect for me and for my family. We love it so much that normally I make a very big pan that way we can eat at least twice. It is a perfect meal to freeze. Once you tried you will make it again! (more…)
Minestrone Soup
Minestrone soup is a fantastic meal because you can put anything you can find at home, from carrots to peppers, celery, leek, any vegetable is good. If you look in books or websites everybody has a different one, you have them just with stock or like this one with passata. Chicken Tikka Masala
Who doesn’t like Chicken Tikka Masala? I think everybody love it. I have eaten a few times using those ready sauces from the supermarket, they were not great but the taste was almost as the real thing. Finally in Jamie’s Comfort Food it was the perfect recipe, actually one of the less complicated recipes from the whole book, still quite elaborate, but absolutely fantastic in taste. (more…)
Pasta with Zucchini
I love pasta, you can make in so many ways, very complicated sauces or very easy and fast. This recipe from Nigella is highly recommended, specially if you don’t want to spend much time in the kitchen, in no time you have a nice dinner with quite a lot of vitamins thanks to the zucchini. (more…)
Cypriot Lamb Dish
A couple of weeks ago I decided to make this dish from Annabel Langbein, it was the first time for me to cook pastinak and it was perfect, according to my family maybe too much carrots, but I still think that it was good, I adapted a bit the ingredients and the quantity to make sure we had enough food to be able to eat twice, actually the second time taste even better, all the spices have done their extra work. Lasagna
Lasagna is one of those meals that I have tried many times, from books, magazines or websites, but somehow never seemed to work the way it should be, always just too moist. Finally after searching and testing I found my own way to get the perfect lasagna, the secret is just to cook the sauce as long as possible, that way the liquids will evaporate and you will get what you are looking for. So this is my recipe, of course you can change the ingredients to your own taste, just remember to make sure the sauce is not too runny. (more…)
