Risotto Bolognese
Risotto is one of our favourites at home, actually my daughter says that is my speciality always works, is great and event that for some people might give a lot of work, I enjoy the slow cooking, spoon by spoon. I have also a book at home from Paul Hollywood from where I have bake a few recipes already. Cranberry and Pistachio Biscotti
Biscotti’s, who doesn’t know them? They are the perfect treat to have together with an espresso, it is absolutely delicious, even the coffee taste better because it brings the aroma’s together. I am sure that you have tried them with almonds, that is the most typical one, but if you haven’t tried this version from Nigella, you should definitely do so.
The cranberries and the pistachios are so exotic that will give a very special taste. (more…)
Easy Pecan Blondies
One of my favorite things to do is baking, a good cake always can cheer you up at anytime and of course is also very relaxing and enjoyable. I have a few books I use, depending on the mood. Brownies
This recipe I got from an ex-colleague of mine years ago. I still keep using it, only some times I change some things. Normally you use 300 gr. dark chocolate, but I make it how I feel it, so some times I do 150 gr. dark/150 gr. milk or other way. The important thing is to keep the quantity on 300 gr. Also I like a bit lighter so I add a teaspoon of baking powder, that was not in the original I got from her.

Arroz con leche
When I was young my mother use to make Arroz con Leche (rice pudding) mostly around Easter time, I am not sure why but that was kind of a tradition in our house. Panellets
This is a typical Catalan sweet that you normally eat on November 1st, the day of “All Saints”. It is not very well known outside Catalonia and that is really a pity because they are actually very good, easy and tasty.
My recipe to make 30 Panellets, ingredients for the base dough:
- 250 gr. Very fine ground almonds
- 200 gr. Caster sugar
- 150 gr. Potatoes’ or Sweet potato
- Zest of ½ lemon
Clean the potatoes and boil them with skin until they are soft, drain well and peal them, then make puree and allow to cool down completely. After that add the sugar, almond and lemon zest, using a fork mix well but not too long otherwise it will too soft and will not cook well. Before you start making the Panellets you will need to stove your hands with flour. (more…)
