The last few days I have been checking in our refrigerator to clean up all the left overs fresh food and putting in every meal that I could think. From all the ingredients I could two boxes with a few blueberries and few raspberries, so the best thing I could think were to make a fruit muffins. So here is my experiment in fruit muffins, a good way to work out the left overs and have a sweet treat at home, something that everybody loves.
Lately looks like the bananas at home are getting very fast ripe, of course then I have to start experimenting and see other possibilities to use them in different kind of cakes, breads, muffins, … In this case I made one without chocolate, changing the kind of sugar and using yoghurt. The result was a fantastic bread, that didn’t last very long and a week after I had to make again 😉 (more…)
Who doesn’t like chocolate? Actually I don’t know anybody who doesn’t like. One of my favorite cakes is Brownies, but sometimes I like to try other options, like this cake, I call blondies because 2 of the basic ingredients are replaced, I use white chocolate and almonds, a delicious combination, perfect for a school treat or just to treat yourself with something very sweet. The summertime is perfect to make cakes with fruit that only then are at their best, like peach or plums. Of course some times those cakes you can make the rest of the year using apples or pears. In this case I made peach cake where of course you can substitute with other fruit that you prefer. It is easy, colorful, sweet and very tasty. Perfect for a dessert or just for an afternoon tea, what best for you is, in our case we eat it in our Sunday afternoon tea, delicious! (more…)
It has been a couple of months since my last post, after a summer break to enjoy the weather and expending as much time as possible with my family, is time to go back to the kitchen for serious business 😉 Of course there is no better way to start that with a cheesecake, you can top with any fruit you like, I used blueberries, I bit traditional perhaps but strawberries or cherries will also be perfect. Oatmeal is one of the most healthiest grains there is, has a lot of vitamins, proteins, minerals and fibers, also you can make a delicious breakfast or bake fantastic cakes or cookies. All of them good reasons to use! Well in a day like today, cloudy and not very pleasant for spring day, the best you can do is bake something, so why not this oatmeal cookies? Banana bread is one of those easy and fantastic cakes to make. If you have ripe bananas at home it is the best cake to make to avoid food waste. If you keep in an airtight container will stay good for about 4 days, if you don’t eat all before then of course, My version includes chocolate but if you don’t have you can just leave out, it tastes good as well (more…)
I think Scones is one of our favorites at home to have with a cup of tea, typical English. Actually we go to the UK almost every year, we need to get some supplies, like English Tea, special flours that are difficult to get in Holland or they are much more expensives, or icing sugar. Then we enjoy going to the tea rooms to have a scone, the best scone ever I had in York, since then I have been searching for a good recipe, combining ingredients and this is my favorite one, still the one in York is winning but I maybe one day I get the secret ingredient. This recipe I got from an ex-colleague of mine years ago. I still keep using it, only some times I change some things. Normally you use 300 gr. dark chocolate, but I make it how I feel it, so some times I do 150 gr. dark/150 gr. milk or other way. The important thing is to keep the quantity on 300 gr. Also I like a bit lighter so I add a teaspoon of baking powder, that was not in the original I got from her.
