Vegetarian-Pie-8We all know that we need to eat at least 200 gr. vegetables per day, sometimes we struggle because we might not get to that, well there are always options, like a soup or a vegetarian pie, where you can hid a lot of vegetables and get your portion of vitamins and proteins. Actually not much, we just love it and it has become my speciality, I like to try new combinations with different kind of vegetables and of course cheese, normally you would think parmesan but why not goat cheese? The soft goat cheese that is sold here in The Netherlands is perfect for a risotto, gives a different taste, I use normally the one with honey, and that sweetness with the savory is fantastic.  (more…)

Pasta-with-broccoli-7Broccoli is one of the healthiest vegetables there is. Now that the superfoods are so much in, I thinks is right to say that broccoli is a superfood. The nutrients you find besides a lot of fibers are, vitamin A, B1, B2, B3, B5, B6, C, E and K, and the metals calcium, iron, magnesium, manganese, phosphorus, potassium, sodium and zinc. Risotto with mushrooms

Mushrooms-risotto-8Some time ago I already made a review for risotto with mushrooms, then was from a Jamie Oliver recipe, this time is an oven risotto from Karin Luiten. The good thing from this one is that is easier because you finish in the oven with all the bouillon, so no need to add spoon by spoon, the taste is still fantastic. Sometimes I hear people saying that eat vegetarian is boring, well that’s absolutely not true. I am not vegetarian, I like to eat meat or fish sometimes, but at home we eat for sure a few times a week no meat or fish at all and it is a very colorful and healthy meal then. Also it is a great source of vitamins C, B6, potassium, thiamine, riboflavin, folate, magnesium, phosphorous, iron, and zinc. Tortilla-8I think tortilla is one of the favourites and easiest recipes from the Spanish kitchen that you can make. You can eat warm but also cold, that makes a perfect meal for a picnic or to eat in a sandwich. We always say that if you potatoes and eggs you can always have people for dinner. Of course there is a bit of trick if you want to make the perfect tortilla, it is a matter of practise and to have the right cover to turn it around, that also needs skills. Risotto is per definition one of the favourites at home, with all kind of ingredients, most of the time I make the vegetarian versions some how they are the most creamy. This risotto with mushrooms is from the book Jamie 30 Minutes Meals, it is is just so delicious, quite easy but as all risotto’s impossible in 30 minutes 😉 In the book is a full menu, risotto, salad and dessert, I only made the risotto and part of the salad, no dessert to keep the meal healthy and all took me about 1 hour cooking, but still I love it and I am going to make again, who cares about the time when a meal is good!  (more…)
