Lately I have been doing some experiments, preparing classics with a twist or turning them into a vegetarian option. I feel an urge to do something that can make a difference, even if is just for a small step, if we all do we can get some changes and maybe make our world a bit more sustainable. Every little change, not matter, how small, is better than doing nothing. So just to clarify, I am not vegetarian, but I eat maybe once a week meat or fish, the alternatives with vegetables are just so divers that you can do anything. This time a second attempt to prepare a beetroot risotto was a fantastic result.

Banana Bread
Lately looks like the bananas at home are getting very fast ripe, of course then I have to start experimenting and see other possibilities to use them in different kind of cakes, breads, muffins, … In this case I made one without chocolate, changing the kind of sugar and using yoghurt. Blondies
Who doesn’t like chocolate? Actually I don’t know anybody who doesn’t like. One of my favorite cakes is Brownies, but sometimes I like to try other options, like this cake, I call blondies because 2 of the basic ingredients are replaced, I use white chocolate and almonds, a delicious combination, perfect for a school treat or just to treat yourself with something very sweet. (more…)
Strawberry Jam
The summer or the end of the summer is ideal to make your own jam, there is a lot choice from plums, to strawberries, cherries, blackberries, even peach. Because they are in season they are cheap and of course they taste very sweet. Well you know just get some big quantities and start making your own jam for the coming months. I made a less sweet one, more fruit less sugar, so let’s say not so unhealthy 😉 (more…)
Chili con Carne
Chili con carne is one of those meals that you can make with endless combinations, as long the basics (beans, spices and meat) are there and from good quality, you can always add other vegetables, serve with rice or not, with creme fraiche or yogurt, even with couscous. Well this is my version of this healthy international meal, less meat and more beans, not vegetarian of course, otherwise will not be “con carne”, but still delicious and easy to make. (more…)
Peach Cake
The summertime is perfect to make cakes with fruit that only then are at their best, like peach or plums. Of course some times those cakes you can make the rest of the year using apples or pears. In this case I made peach cake where of course you can substitute with other fruit that you prefer. It is easy, colorful, sweet and very tasty. Perfect for a dessert or just for an afternoon tea, what best for you is, in our case we eat it in our Sunday afternoon tea, delicious! (more…)
Blueberries Cheesecake
It has been a couple of months since my last post, after a summer break to enjoy the weather and expending as much time as possible with my family, is time to go back to the kitchen for serious business 😉 Of course there is no better way to start that with a cheesecake, you can top with any fruit you like, I used blueberries, I bit traditional perhaps but strawberries or cherries will also be perfect. Oatmeal cookies
Oatmeal is one of the most healthiest grains there is, has a lot of vitamins, proteins, minerals and fibers, also you can make a delicious breakfast or bake fantastic cakes or cookies. All of them good reasons to use! Well in a day like today, cloudy and not very pleasant for spring day, the best you can do is bake something, so why not this oatmeal cookies? They are easy to make and kids will enjoy helping, last time I made them with my daughter, good fun. (more…)
Pasta Salad
When the days are getting warmer there is nothing better for lunch or dinner that a good nutritious salad. They are very easy to make and with a lot of combinations of course, and because I grow some veggies in my own garden it is just fantastic. The rocket leaves and the radish are now on their best, really tasty and full of vitamins specially because I only pick them up just an hour before we are about to eat, so fresher you can not get. (more…)
Pizza
Who doesn’t like pizza? I don’t think I have ever meet somebody who doesn’t like pizza, you can have in all ways, gluten free, lactose free, vegetarian, with meat or fish, only cheese, you name it, all is possible. That makes that pizza is one of the most populars meals there is, you can make as healthier as you want or as unhealthier as you can 😉 We don’t eat very often pizza but when we do we make it ourselves, it is worth to learn how to make the dough, the taste is nothing compare with those ready pizzas. (more…)
