What can I say about risotto that I haven’t said before? Actually not much, we just love it and it has become my speciality, I like to try new combinations with different kind of vegetables and of course cheese, normally you would think parmesan but why not goat cheese? The soft goat cheese that is sold here in The Netherlands is perfect for a risotto, gives a different taste, I use normally the one with honey, and that sweetness with the savory is fantastic. Frittata
Frittata is a fantastic italian recipe where you can use endless combinations of ingredients, I often make it just to “clean” the leftovers vegetables or meat I have in the refrigerator. Just open it and look at what you have and test, then you can have a different frittata every time, perfect that variation. Saffron Risotto
Saffron is the most expensive spice there is. It is a fantastic taste maker plus has also some vitamins and minerals (manganese, magnesium, iron, potassium, vitamin C and B6), of course you will only use a bit for your meal but still it is good to say that is a healthy spice. Lasagna
Lasagna is one of those meals that I have tried many times, from books, magazines or websites, but somehow never seemed to work the way it should be, always just too moist. Finally after searching and testing I found my own way to get the perfect lasagna, the secret is just to cook the sauce as long as possible, that way the liquids will evaporate and you will get what you are looking for. So this is my recipe, of course you can change the ingredients to your own taste, just remember to make sure the sauce is not too runny. (more…)

Pasta with Sausages, Salad and Cakes
Normally I don’t make the whole menu from the Jamie in 30 minutes meals, I think is too much, not only because it takes much longer than that but because you don’t need the dessert, you make a kind of healthy meal a bit unhealthy. But this time was on Sunday I had plenty time and on Sunday you can have a bit of extra cake, so I decided to make the whole menu. Pasta Bolognese
Pasta Bolognese must be one of the most populars sauces there is, everybody has his/her own way of making and of course I also have mine. The basic is like any bolognese, minced meat and tomatoes, what it makes different from the rest are the spices/herbs that I use plus of course I also add some vegetables, to make it a bit more healthy. Normally I made a big pan, so sauce for 6 people, that way I can freeze the half to eat another time when we don’t have much time to cook. (more…)
