Sometimes I hear people saying that eat vegetarian is boring, well that’s absolutely not true. I am not vegetarian, I like to eat meat or fish sometimes, but at home we eat for sure a few times a week no meat or fish at all and it is a very colorful and healthy meal then. This is a very simple and delicious pie to make as main course for 4 people or just as a side dish in a party, since you can make in advanced and just warm up when you are going to eat. Also for the filling you can just add whatever you can find at home, other vegetables like onions, paprikas or aubergines and the ham you can leave out or even replace for bacon or chicken, this last one is best if you first bake in olive oil with some salt and pepper.  (more…)

Kofta-8Kofta is one of the those recipes that everybody make just some how different. I have tried many recipes from books or magazines, so making my own combination finally I got the one is perfect for me and for my family. If you look in books or websites everybody has a different one, you have them just with stock or like this one with passata. Lasagna

Lasagne-8Lasagna is one of those meals that I have tried many times, from books, magazines or websites, but somehow never seemed to work the way it should be, always just too moist. Finally after searching and testing I found my own way to get the perfect lasagna, the secret is just to cook the sauce as long as possible, that way the liquids will evaporate and you will get what you are looking for. So this is my recipe, of course you can change the ingredients to your own taste, just remember to make sure the sauce is not too runny. (more…)

Tortilla-8I think tortilla is one of the favourites and easiest recipes from the Spanish kitchen that you can make. You can eat warm but also cold, that makes a perfect meal for a picnic or to eat in a sandwich. We always say that if you potatoes and eggs you can always have people for dinner. Of course there is a bit of trick if you want to make the perfect tortilla, it is a matter of practise and to have the right cover to turn it around, that also needs skills. Pasta Bolognese

Pasta-Bolognesa-4Pasta Bolognese must be one of the most populars sauces there is, everybody has his/her own way of making and of course I also have mine. The basic is like any bolognese, minced meat and tomatoes, what it makes different from the rest are the spices/herbs that I use plus of course I also add some vegetables, to make it a bit more healthy. Normally I made a big pan, so sauce for 6 people, that way I can freeze the half to eat another time when we don’t have much time to cook.  (more…)
