What can I say about risotto that I haven’t said before? Actually not much, we just love it and it has become my speciality, I like to try new combinations with different kind of vegetables and of course cheese, normally you would think parmesan but why not goat cheese? The soft goat cheese that is sold here in The Netherlands is perfect for a risotto, gives a different taste, I use normally the one with honey, and that sweetness with the savory is fantastic. Saffron Risotto
Saffron is the most expensive spice there is. It is a fantastic taste maker plus has also some vitamins and minerals (manganese, magnesium, iron, potassium, vitamin C and B6), of course you will only use a bit for your meal but still it is good to say that is a healthy spice. The saffron risotto is also known as “Risotto a la Milanese”, a perfect soft, creamy rice, easy to make and very good as side dish for meats or maybe as lunch. (more…)
Risotto with mushrooms
Some time ago I already made a review for risotto with mushrooms, then was from a Jamie Oliver recipe, this time is an oven risotto from Karin Luiten. The good thing from this one is that is easier because you finish in the oven with all the bouillon, so no need to add spoon by spoon, the taste is still fantastic. In her book she has 4 kind of oven risotto, good idea to try with different vegetables. Easy and simple to follow. (more…)
Ossobuco alla Milanese
Of course being risotto one of our favorites at home and one of my specialties, the first recipe from Jamie’s “Comfort Food” that I would try had to be this one. I think one of the best meals I had in long time. It was a long elaborate meal, even that in the book says 2 hours and 30 minutes, in my case was 1 hour extra, but I really didn’t mind, neither my family, this risotto has turned out to be the favorite at home and I am going to make soon again, I challenge you to make it as well, it is worth! Risotto with Mushrooms
Risotto is per definition one of the favourites at home, with all kind of ingredients, most of the time I make the vegetarian versions some how they are the most creamy. This risotto with mushrooms is from the book Jamie 30 Minutes Meals, it is is just so delicious, quite easy but as all risotto’s impossible in 30 minutes 😉 In the book is a full menu, risotto, salad and dessert, I only made the risotto and part of the salad, no dessert to keep the meal healthy and all took me about 1 hour cooking, but still I love it and I am going to make again, who cares about the time when a meal is good! Risotto Bolognese
Risotto is one of our favourites at home, actually my daughter says that is my speciality always works, is great and event that for some people might give a lot of work, I enjoy the slow cooking, spoon by spoon. In this recipe from the book Kitchen from Nigella, she gives a twist with another basic sauce the bolognese, something that you will only think to combine with pasta and it is a great combination.
