Lately I have been doing some experiments, preparing classics with a twist or turning them into a vegetarian option. I feel an urge to do something that can make a difference, even if is just for a small step, if we all do we can get some changes and maybe make our world a bit more sustainable. Every little change, not matter, how small, is better than doing nothing. So just to clarify, I am not vegetarian, but I eat maybe once a week meat or fish, the alternatives with vegetables are just so divers that you can do anything. This time a second attempt to prepare a beetroot risotto was a fantastic result.

Chili con Carne
Chili con carne is one of those meals that you can make with endless combinations, as long the basics (beans, spices and meat) are there and from good quality, you can always add other vegetables, serve with rice or not, with creme fraiche or yogurt, even with couscous. Well this is my version of this healthy international meal, less meat and more beans, not vegetarian of course, otherwise will not be “con carne”, but still delicious and easy to make. (more…)
Pasta Salad
When the days are getting warmer there is nothing better for lunch or dinner that a good nutritious salad. They are very easy to make and with a lot of combinations of course, and because I grow some veggies in my own garden it is just fantastic. The rocket leaves and the radish are now on their best, really tasty and full of vitamins specially because I only pick them up just an hour before we are about to eat, so fresher you can not get. Vegetarian Pie
We all know that we need to eat at least 200 gr. vegetables per day, sometimes we struggle because we might not get to that, well there are always options, like a soup or a vegetarian pie, where you can hid a lot of vegetables and get your portion of vitamins and proteins. You can let your imagination goes and use anything you like, as long you have a lot of them, more or less keep the proportions as in my recipe and you will have a success on the table. (more…)
Pizza
Who doesn’t like pizza? I don’t think I have ever meet somebody who doesn’t like pizza, you can have in all ways, gluten free, lactose free, vegetarian, with meat or fish, only cheese, you name it, all is possible. That makes that pizza is one of the most populars meals there is, you can make as healthier as you want or as unhealthier as you can 😉 We don’t eat very often pizza but when we do we make it ourselves, it is worth to learn how to make the dough, the taste is nothing compare with those ready pizzas. Risotto with Goat Cheese
What can I say about risotto that I haven’t said before? Actually not much, we just love it and it has become my speciality, I like to try new combinations with different kind of vegetables and of course cheese, normally you would think parmesan but why not goat cheese? The soft goat cheese that is sold here in The Netherlands is perfect for a risotto, gives a different taste, I use normally the one with honey, and that sweetness with the savory is fantastic. Frittata
Frittata is a fantastic italian recipe where you can use endless combinations of ingredients, I often make it just to “clean” the leftovers vegetables or meat I have in the refrigerator. Just open it and look at what you have and test, then you can have a different frittata every time, perfect that variation. Healthy Rice
I am not sure how I suppose to call this meal that’s why the name “healthy rice”. It is for my understanding a vitamin bomb because there are a lot vegetables, you could make it fully vegetarian keeping the sausages out, but I think they give extra taste to the meal. Greek Couscous Salad
Spring and summer are ideal for salads, fresh and healthy, but there are also warm salads that are good for those days when the sun is less bright, like this recipe where you have warm turkey and warm couscous, perfect for a lunch but also for a lighter dinner, serving with self made tzatziki, there you have the greek salad. Pasta with broccoli
Broccoli is one of the healthiest vegetables there is. Now that the superfoods are so much in, I thinks is right to say that broccoli is a superfood. The nutrients you find besides a lot of fibers are, vitamin A, B1, B2, B3, B5, B6, C, E and K, and the metals calcium, iron, magnesium, manganese, phosphorus, potassium, sodium and zinc.
