After a couple of weeks off, finally life is starting to go to normal and I can get back into my cooking and then of course time to update my website. This Spanish Casserole I learned years ago from my mum, but every time I make is surprisingly delicious, I forget that something so simple and easy to make is just fantastic. The secret is the kind of meat you use and the freshness of all the ingredients, all natural flavors come together to a great meal. (more…)
Guacamole must be one of the most populars sauces in the world, everybody makes in a different way, with different ingredients, that’s the beauty of it. You can just combine and make it so spice as you like, at home we try not to eat much spicy food, but still a bit of chili in the guacamole is part of the ingredients. (more…)
I think tortilla is one of the favourites and easiest recipes from the Spanish kitchen that you can make. You can eat warm but also cold, that makes a perfect meal for a picnic or to eat in a sandwich. We always say that if you potatoes and eggs you can always have people for dinner. Of course there is a bit of trick if you want to make the perfect tortilla, it is a matter of practise and to have the right cover to turn it around, that also needs skills. Well maybe you can start practising now, so get ready to start making your perfect tortilla. (more…)
Pasta Bolognese must be one of the most populars sauces there is, everybody has his/her own way of making and of course I also have mine. The basic is like any bolognese, minced meat and tomatoes, what it makes different from the rest are the spices/herbs that I use plus of course I also add some vegetables, to make it a bit more healthy. Normally I made a big pan, so sauce for 6 people, that way I can freeze the half to eat another time when we don’t have much time to cook. (more…)

This recipe I got from an ex-colleague of mine years ago. I still keep using it, only some times I change some things. Normally you use 300 gr. dark chocolate, but I make it how I feel it, so some times I do 150 gr. dark/150 gr. milk or other way. The important thing is to keep the quantity on 300 gr. Also I like a bit lighter so I add a teaspoon of baking powder, that was not in the original I got from her.
So these are the ingredients I use most of the times: (more…)
When I was young my mother use to make Arroz con Leche (rice pudding) mostly around Easter time, I am not sure why but that was kind of a tradition in our house. This is a typical Catalan sweet that you normally eat on November 1st, the day of “All Saints”. It is not very well known outside Catalonia and that is really a pity because they are actually very good, easy and tasty.
My recipe to make 30 Panellets, ingredients for the base dough:
- 250 gr. Very fine ground almonds
- 200 gr. Caster sugar
- 150 gr. Potatoes’ or Sweet potato
- Zest of ½ lemon
Clean the potatoes and boil them with skin until they are soft, drain well and peal them, then make puree and allow to cool down completely. After that add the sugar, almond and lemon zest, using a fork mix well but not too long otherwise it will too soft and will not cook well. Before you start making the Panellets you will need to stove your hands with flour. (more…)
