I love dishes that are going into the oven, they are normally slow cooking and with fantastic taste. In the winter is of course one of my favourite things to eat. Checking into my books I found this recipe from Nigella that I had to try, being Spanish any meal that has chorizo in is something to test and it was certainly not disappointing, easy to make and with great flavours. Speedy Scalopine
On Friday’s normally is only the 2 of us at home for dinner, so I try to find simple recipes but still delicious and of course full of vitamins. This Speedy Scalopine from Nigella from her book Kitchen is one of those. Very simple to prepare and depending on the vegetables/salad you use, can have a lot of vitamins, the great taste comes from spices you use in the scallop, just perfect. (more…)
Minestrone
Minestrone soup is one of our favorites at home, normally I use a basis with passata, but this version from Nigella from her book “Kitchen” is absolutely delicious. The good thing from such a soup is that you can just change the ingredients with whatever you might have left over in your refrigerator, perfect to avoid food waste. Also is just what I called a vitamin bomb, since you are using a lot of vegetables and soup is one of the healthiest ways to have your vitamin portion for the day. (more…)
Blueberry Cornmeal Muffin
Muffins are one of the easiest sweets to make and perfect to share with others. Of course it is something that you can prepare with the kids, they will enjoy making them. These muffins are from the book Kitchen from Nigella Lawson, my daughter and I prepared on a sunday afternoon and they were a success, absolutely delicious, you keep for a couple of days and you can enjoy a bit longer that way. Risotto Bolognese
Risotto is one of our favourites at home, actually my daughter says that is my speciality always works, is great and event that for some people might give a lot of work, I enjoy the slow cooking, spoon by spoon. In this recipe from the book Kitchen from Nigella, she gives a twist with another basic sauce the bolognese, something that you will only think to combine with pasta and it is a great combination.
