Sometimes I hear people saying that eat vegetarian is boring, well that’s absolutely not true. I am not vegetarian, I like to eat meat or fish sometimes, but at home we eat for sure a few times a week no meat or fish at all and it is a very colorful and healthy meal then. If you grilled your vegetables they taste fantastic and they are a bomb of vitamins. You can grill I think all vegetables, it is easy and delicious and you can made endless combinations.
The ingredients you need depends in for how many people is, in our case is for 3:
- 2 red onions
- 2 paprikas in different colors
- 1 zucchini
- 1 chili pepper
- 200 gr. wine tomatoes
- 1 tablespoon Balsamic
- 2 teaspoons dried oregano
- salt and pepper
To start chop the onions in big pieces, the zucchini in 1 cm dices (cut in the length, then the 2 halfs again the length after that you can dice it), chop the paprikas in big pieces and the chilli pepper very finely. Once the vegetables are ready put them in a casserole together with the tomatoes. Add the oregano, balsamic, olive oil, salt and pepper, mix all very well.
Grill the vegetables in a 180 degrees preheat oven for about 45 minutes, every 10 to 15 minutes scoop a bit to make sure they don’t get too dark. Serve with some fresh cheese, like ricotta, baked potatoes (see recipe in side dishes), bread and a good quality white wine.
