I think tortilla is one of the favourites and easiest recipes from the Spanish kitchen that you can make. You can eat warm but also cold, that makes a perfect meal for a picnic or to eat in a sandwich. We always say that if you potatoes and eggs you can always have people for dinner. Of course there is a bit of trick if you want to make the perfect tortilla, it is a matter of practise and to have the right cover to turn it around, that also needs skills. Well maybe you can start practising now, so get ready to start making your perfect tortilla.
I always find very difficult to say the quantity of ingredients you need, all depends a bit of the kind of potatoes and the size of your pan. Let’s say for a tortilla that is about 26 cm round, you might need:
- 1 kg. potatoes, peeled and cut in slices
- 1 big onion, chopped
- 4 eggs
- Salt
- Olive oil, a lot !
In a big pan heat a bodem of olive oil, then bake the potatoes adding some salt, stirring very often to make sure that they don’t stick to to bottom, also you need to check constantly if there is enough oil, adding if necessary, otherwise you might get a very dry tortilla and believe me that doesn’t taste so good.
You will have smash them a bit to get them well cooked, when they get soft and golden add the onion and bake for another 10 minutes until all is ready.
In a bowl mix the eggs very well with a bit of salt, not too much if you already seasoned the potatoes. Then this is an important step, scoop the potatoes into the eggs bowl, mix well, making sure there is egg everywhere. When ready throw into a 26 cm greased pan, the pan shouldn’t be hot, otherwise the tortilla will start cooking and first you need to make sure is well spread into the pan.
Bake with a medium heat for about 10 minutes, making sure is not sticking on the sides and on the bottom. Keep checking because could be that needs less than 10 minutes, all depends on quantity. At this point you will need to turn out the tortilla, that is not easy, you just need the right lid for this and a steady hand, just let it glide into the pan slowly.
Bake the other side for about 5 minutes until is golden and nice. Serve with a fresh salad, bread and a good white wine. It is absolutely delicious, easy and also low budget! Buen Provecho
