We go at least once a year to Great Britain on holidays, we love the peace you can have in the country side, also the tearooms, they are fantastic, our favorites are scones and of course Carrot Cake. A few years ago I bought The Great British Book of Baking with great cakes and the best carrot cake you can find. Muffins are one of the easiest sweets to make and perfect to share with others. Of course it is something that you can prepare with the kids, they will enjoy making them. These muffins are from the book Kitchen from Nigella Lawson, my daughter and I prepared on a sunday afternoon and they were a success, absolutely delicious, you keep for a couple of days and you can enjoy a bit longer that way. One of my favorite things to do is baking, a good cake always can cheer you up at anytime and of course is also very relaxing and enjoyable. I have a few books I use, depending on the mood. This one is the Easy Pecan Blondies from the “The Great British Bake Off Everyday”. I love blondies, they are sweet and fantastic you have them with almonds or like in this case with pecan. (more…)
