Oatmeal is one of the most healthiest grains there is, has a lot of vitamins, proteins, minerals and fibers, also you can make a delicious breakfast or bake fantastic cakes or cookies. All of them good reasons to use! Well in a day like today, cloudy and not very pleasant for spring day, the best you can do is bake something, so why not this oatmeal cookies? They are easy to make and kids will enjoy helping, last time I made them with my daughter, good fun.
The ingredients you need for about 24 small cookies or 12 big ones:
- 100 gr. oatmeal
- 100 gr. wholemeal flour
- 100 gr. cane sugar
- 8-10 gr. vanilla sugar (I made my own, but you can use one small bag)
- 1 tsp. baking powder
- 1 tsb. cinnamon
- 1 egg
- 60 gr. butter, diced
- 75 gr. dark chocolate (optional)
Very simple, mix all the dry ingredients in a big bowl, then using a mixer or by hand what you prefer, add the butter slowly, with the mixer on, at last the egg, continuous mixing until you get a consistent dough, but be careful don’t do it too much.
To make the cookies the easiest is to make a big roll and cut in slices or you can just make balls and flattened. The size is all up to you, you can make 24 smalls or 12 big ones. Put them in a baking tray that is lined with baking paper.
Bake them for about 15 minutes in a 200 degrees preheated oven. Once ready leave them to cool down completely. Something that kids will love to do is decorate with dark chocolate. Just melt au bain marie the 75 gr. chocolate, keep stirring making sure it doesn’t cook, then using an icing bag, decorate the cookies. Let the chocolate to set well and get hard.
Perfect with a cup of tea or coffee, you can keep them in an airtight container for about 4 days. Just make sure is well closed otherwise the cookies will get a bit hard. Enjoy!
